    This was much more involved than I predicted. The instructor was pleasant and explained things well. She was knowledgeable. However, she had some difficulty managing the projection technology while cooking (eg her leaving the camera stuck on an image that is no longer applicable so didn’t see what she was currently doing). Also, we needed a break! 3 hours listening and cooking without a break was difficult. Also, the recipe instructions were difficult to follow and it was difficult to be fully prepped with the correct ingredients, tools and supplies since these were mixed into the 6 pages of instructions. It would have been helpful to have a full list of ingredients and supplies and tools at the top of the first page so I had everything ready from the start and didn’t find myself with no parchment paper, no ruler, etc in the middle of the class.

    The instructor was very knowledgeable, and the croissants turned out great! I would take another class with the instructor again. And I will definitely be making croissants in the future!

    The class was very helpful and the instructor was very knowledgeable and nice. She really seemed to know the process and seemed very qualified. However, it moved too quickly and was extremely tiring for me and my partner. It would seem that the instructor was asked to take over from another instructor at the last minute and so, understandably, she seemed moved at a very fast pace to keep to the time allotted and cover all the materials. This meant that there were times that the instructor went ahead before we had reached the stage that she was at. Since this was the first time I had made croissants, it got a bit confusing for me because my mind was focused on catching up versus listening to the instructor as she moved on to the next part. Some suggestions for the future are: 1. Fine tune the scope and focus of this course to make sure that the basic technique is down pat as the primary goal. Then add a second course to cover adding the optional variations of fillings for create different croissants. Skip the strawberry jam segment. It was interesting but unnecessary. Perhaps it could go into the Variations Class? 2. Have the instructor provide some general instructions for using Zoom at the beginning, so that participants know to ask questions of the instructor, one at a time. There were several occasions where voices got cut off and the instructor did not hear our questions. 3.It would be great if the instructor could allow some time for participant introductions at the very beginning of the class, so that we know a little bit about the other participants and their level of baking experience. This would set a relaxed and sociable mood between participants for this program and I feel would add to the experience. We did this in the challah making class and it worked out great! 4. I would have benefitted from knowing "what to look for" at each stage of the turning and rolling out process for the dough and more information about what can go wrong and why so that when we try this ourselves, we are prepared for various outcomes. Thanks to the instructor and her great effort!

    The class moves at a rapid pace! There is way too much packed into this class. Instead of trying to cover too many items, more time should be spent on making sure everyone is working at the same pace. Doing the class virtual is ok, but don't give us instructions to turn our mixers on then keep talking. We can't hear you. I had a family member who was in the other room watching tv. If I didn't have help, I would have never finished the class. So, I'll never understand why it was such a rush??? Slow down!!!!

    Fran was a wonderful teacher and I so enjoyed learning how to make croissants on a Saturday night! The speed of the class felt a little rushed - I would have appreciated some time to watch a demo and then try it on my own instead of watching and doing at the same time - but that's not a fault of the instruction as much as the way it has to be to accomplish such a time intensive process in only three hours. I would definitely be interested in other baking classes as well as an advanced croissant techniques class!
