Chocolate is one of the most complex and popular ingredients in the world. We will uncover its secrets and teach you the ins and outs of how to expertly work with this exotic ingredient in today’s hands-on class. 
 
Menu: 

  • Chocolate Truffles with Tempered Chocolate Shell
  • Chocolate Caramel Mousse Tart with Chocolate Tart Shell and Chocolate Glacage (Mirror Glaze) 
  • White Chocolate-Brioche Bread Pudding with Salted Caramel
  • Triple Chocolate Cheesecake with Cocoa Nib Brownie Base

Skills covered in class:

  • Understanding different varieties of chocolate 
  • Tempering 
  • Melting chocolate 
  • Making and baking custard  
  • Mixing cake batter 
  • Determining cake doneness 
  • Preparing mousse 
  • Making ganache 
  • Preparing tart dough  

In this hands-on class, students will be paired in groups of three to four and work together as a team to prepare the recipes.

Refund Policy

  • All classes have a three (03) day cancellation policy, except Culinary Boot Camps 1 and 2 which have a two-week cancellation policy. 
  • You must email [email protected] to cancel an existing reservation.
  • If you cancel a class other than Culinary Boot Camps 1 & 2 more than 3 days in advance and have paid with a credit card, you will receive a refund to your card, minus the 15% administrative fee which is non-refundable and non-transferable.
  • If you cancel more than 3 days in advance and have paid with a gift card, you will receive an account credit valid toward future classes, minus the administrative fee. 
  • If you cancel within three days of your class, you will receive an account credit equal to 50% of the class price less 15% administrative fee, which is non-refundable and non-transferable. This credit is valid for one year. 
  • If you are unable to attend, you are also welcome to send a guest in your place. 
  • Culinary Boot Camps 1 & 2 have a 2-week cancellation policy so any cancellations before 2-weeks will receive a refund minus the administrative fee. 
  • No credits will be given for cancellations within 2 weeks.
  • In any event where a customer wants to cancel their enrollment and is eligible for a full refund, a 5% processing fee will be deducted from the refund amount.
