Maison Mons, created by Hubert and Rolande Mons in 1964, is a company specialized in aging cheeses. Now led by Hervé Mons, elected "Meilleur Ouvrier de France" in 2000, the company works hand in hand with producers all over France and ages a line of about 200 cheeses that varies with the seasons. The Mons caves, located near Lyon, France, were built with new technologies but keeping traditions in mind.
They provide a space where cheeses can mature in the best conditions under the care of the affineurs team. Thanks to two generations of experience, Maison Mons built its reputation upon the quality of its products and expertise.
